It's estimated that there are thousands of different chemicals in a glass of wine. Researchers at the Technical University of Munich have narrowed this down to 35 compounds that are essencial for the taste. Another 30 compose the smell of a glass of wine. By varying the concentrations of these chemicals in water, they have been able to simulate several types of wine by building the drink from the ground up.
