The flowers of the butterfly pea (Clitoria ternatea) can be made into a herbal tea. This tea has a bright blue color due to the presence of anthocyanins in the flower. Anthocyanins are a class of compounds found in many blue foods like blueberries, grapes, and purple sweet potatoes. Like red cabbage juice, the tea is pH sensitive and will turn bright purple in the presence of acid. Traditionally the tea has been served with lemon to produce the color change, but more recently it has been popularized as a syrup for cocktails. |
